Ingredients

1 cup prawns
1/2 cup mussels
1 cup white crab meat
1/2 cup squid
2 cups alborio rice
3 cups vegetable stock
3 cloves garlic
2 small onions
1 cup peas
3 handfuls of spinach
110g wild mushrooms
1/2 cup parmesan

Handy Hint

Have all the ingredients ready to use

Method

1. Gently fry off the garlic, onions and mushrooms in a bit of oil.
2. Add a knob of butter and melt, then add the rice
3. Add the stock 1 ladle at a time and before the last ladle add all the seafood, and peas
4. Simmer till cooked
5. Add some spinich and parmesan and stir before plating up
