Spicy bean, tomato and sausage soup recipe from compingstar
Ingredients10ml olive oil
1 onion (peeled & chopped)
2 cloves garlic (peeled and crushed)
1 chopped red pepper,
2 chopped celery sticks
150g chorizo sausages (cut into small chunks)
15ml tomato puree
300ml vegetable stock
1 can of borlotti beans or black eyed beans
Pinch of sugar (optional)
Salt & freshly ground black pepper
Crusty white bread to serve

Method1. Heat the oil in a large saucepan, add the onion and garlic and cook for 5 mins until soft.
2. Add the pepper and celery to the pan and cook for 5 mins. Stir in the sausage, tomato puree, tomatoes, stock and seasoning. Bring to the boil, cover and simmer for 15 minutes.
3. Add the beans to the saucepan and cook for 5 mins. Add a little sugar if necessary.
Serve with crusty bread.
