Ingredients

140g (5oz) self raising flour
115g (4oz) soft margarine
115g (4oz) caster sugar
2 eggs
2 heaped tbsp lemon curd
1 tsp lemon juice

Method

1. Preheat the oven to180C/fan 160C/Gas 4.
2. Grease a 1kg/2lb loaf tin.
3. Put all the ingredients in a bowl beat until thoroughly blended.
Bake for 1 hour.
