Ingredients4-6 chicken breasts (sliced in half lengthways and cooked in stock (10 mins))2 large packets frozen broccoli (cooked per packet instructions) 2 x 400g tins of cream of chicken soup 500g light mayonnaise 1 tsp lemon juice 1 tsp curry powder 150g grated cheddar cheese 150g fresh breadcrumbs 1 tbs melted butter |

Method1. Arrange cooked broccoli in a large greased casserole dish.2. Cut up chicken into bite size pieces and arrange on top of the broccoli. 3. Combine soup, mayo, lemon juice and curry powder in a food mixer the pour over broccoli and chicken. 4. Sprinkle cheese on top. 5. Combine breadcrumbs and melted butter, sprinkle on top. 6. Bake in pre-heated oven at 180C/350F (adjust for fan oven) for 45 mins. Serve hot or cold with new potatoes or salad. |
