4-6 chicken breasts (sliced in half lengthways and cooked in stock (10 mins))
2 large packets frozen broccoli (cooked per packet instructions)
2 x 400g tins of cream of chicken soup
500g light mayonnaise
1 tsp lemon juice
1 tsp curry powder
150g grated cheddar cheese
150g fresh breadcrumbs
1 tbs melted butter

Handy Hint

Looks attractive enough for a dinner party and/or buffet. Easy to increase proportions - have cooked this for 40 people for charity lunch.


1. Arrange cooked broccoli in a large greased casserole dish.
2. Cut up chicken into bite size pieces and arrange on top of the broccoli.
3. Combine soup, mayo, lemon juice and curry powder in a food mixer the pour over broccoli and chicken.
4. Sprinkle cheese on top.
5. Combine breadcrumbs and melted butter, sprinkle on top.
6. Bake in pre-heated oven at 180C/350F (adjust for fan oven) for 45 mins.

Serve hot or cold with new potatoes or salad.

Each time I have made this(last 20 years) I have been asked for the recipe. All the work is done early,so you can enjoy and not much washing up!!!!!
