Ingredients

3 over-ripe bananas (mashed up)
2 eggs
140g (5oz) caster sugar
140g (5oz) soft butter
310g (11oz) self raising flour

For the topping

2 tbsp fresh lemon juice
115g (4oz) icing sugar

Method

1. Preheat oven to 180C/350F/Gas mark 4.
2. Lightly grease a 25cm/10 inch tin.
3. Put mashed bananas in a bowl and add sugar, eggs and butter then beat together until well blended.
4. Fold in the flour
5. Put in tin & bake for about 40 minutes (test centre point with knife, if it comes out clean it's ready)
6. Turn out and when cool add topping allowing to set before serving.
