Ingredients

6 thin slices wholemeal bread (with crusts removed)
1 medium onion (peeled and very finely chopped)
125g low fat Cheddar cheese (grated)
250 ml skimmed milk
2 eggs
2 tbsp Greek style yoghurt
1 tsp mustard powder (optional)
Freshly ground black pepper

Method

1. Preheat oven to 180C/Gas mark 4. Lightly grease an ovenproof dish.
2. Cut bread into triangles and place half in the base of the dish.
3. Scatter over onion and almost all the cheese.
4. Arrange the remaining slices of bread over the top.
5. Beat together eggs, milk, yoghurt, mustard (if used) and pepper. Pour over the contents of the dish.
6. Sprinkle over the rest of the grated cheese.
Bake for 40 minutes until golden and well risen.

This really is a cheap and easy dish that can be rustled up from stock cupboard ingredients.
