Ingredients

100g self raising flour
50g caster sugar
2 tbsp milk
1 egg
pinch of salt
50g sultanas
juice and zest of half a lemon

Handy Hint

Don't overcrowd the pan - make four to six at a time depending on your pan size

Method

1. Mix flour, salt and sugar, add egg and gradually beat in milk to make a thick batter. Stir in sultanas and lemon juice and zest.
2. Drop spoonfuls onto a lightly greased fairly hot griddle or heavy based frying pan. Cook until the bubbles rise to the surface, turn and cook on the other side.
3. Serve with a drizzle of honey.
