Chicken drumsticks recipe from francesb
Ingredients8 chicken drumsticks
Vegetable oil, for frying
8 smoked bacon rashers
700ml jar passata sauce
250g punnet cherry tomatoes,
Chopped fresh oregano, plus extra to garnish
To serve - seasonal veg, salt and freshly ground black pepper.
Method1. Season the drumsticks with salt and black pepper and brown them in a lightly oiled pan.
2. Remove and allow to cool slightly, then wrap a bacon rasher around each drumstick.
3. In the same frying pan stir in the passata,tomatoes and oregano and then return the drumsticks to the pan.
4. Bring to the boil, then reduce and simmer uncovered for about 30 mins until the chicken is cooked through and the sauce as reduced and thickened.You will need to turn the chicken occasionally.
Serve with seasonal vegetables.
