Ingredients125g cherry tomatoes (quartered)1/2 small red onion (thinly sliced) 2 tbsp olive oil 4 white fish fillets (approx 150g each) 2 tbsp chopped fresh dill leaves, Juice of half a lemon Salt and freshly ground pepper Green salad or veg to serve |

Method1. Preheat the oven to 200C/Gas 6 and cut four large squares of greaseproof or baking paper.2. In a bowl mix the tomatoes and onion with half the olive oil and season to taste. Place equal amounts of the mixture in the middle of each piece of baking paper.Top with the fish, sprinkle with the dill and drizzle with the lemon juice and remaining olive oil. Season to taste. 3. Loosely wrap and secure each parcel tightly. Place the parcels on a baking tray, seam side up, and bake for 10-15 minutes until the fish is cooked through. Serve with a green salad or seasonal vegetables. |
