Creamy pesto chicken recipe from francesb
Ingredients1 tbsp vegetable oil
500g chicken breast fillets (thinly sliced)
300ml half-fat creme fraiche
2-3 tbsp pesto
1 head of broccoli (cut into florets)
Salt and freshly ground pepper
Method1. Heat the oil in a large frying pan and cook the chicken for 5 mins until a light golden colour.
2. Add the creme fraiche for 8 mins, then add the pesto and simmer for 2-3 minutes until the chicken is cooked through.
3. Meanwhile cook the fettucine in a large pan of boiling water for 8 mins, then add the broccoli and cook for another 2 mins. Drain and tip back into the same pan.
4. Add the chicken and pesto sauce to the pan, season and stir over a low heat until the mixture is heated through. Serve straight away.
