Ingredients

1 tbsp vegetable oil
8 small frying steaks
125ml sherry
3 garlic cloves (crushed)
2 tbsp Worcestershire sauce
300ml single cream or soured cream
Salt and freshly ground black pepper
Chips, mixed salad and chopped fresh parsley to serve

Method

1. Heat a little oil in a large frying pan over a high heat and fry the steaks in 2 batches for 1-2 minutes on each side until browned. Set aside.
2. Add the sherry and garlic to the pan and stir over a high heat to loosen up all the sticky bits at the bottom of the pan.
3. Stir in the Worcestershire sauce and cream and season to taste. Simmer, stirring, for 3-4 mins until the sauce has thickened slightly.
4. Return the steaks to the pan turning to coat them in the sauce and then reheat gently for 1-2 minutes.
5. Serve the steaks drizzled with the sauce and sprinkled with parsley with chips and mixed salad on the side.
