Ingredients3 tbsp olive oil1 large onion (sliced) 700g skinless cod fillet/other white fish fillets (cut into chunks) 50g salami (sliced) 4 tomatoes (quartered) 50g black olives 2 tbsp capers (drained) 2tbsp fresh parsley (chopped) 100ml white wine Salt and freshly ground pepper |

Method1. Preheat the oven to 200C/Gas 6.2. Heat 1 tbsp of the olive oil in a pan. Fry the onion for 6-8 mins until softened and golden. Transfer to roasting tin with the cod, salami, olives, capers, parsley and thyme. 3. Pour over the remaining 2 tbsp of olive oil and white wine. Season with salt and freshly ground pepper. Bake in the oven for 10-15 mins, until the fish is just cooked. Scatter extra parsley over the top to serve. | |||||||||||||||||||
