Ingredients

285 (10oz) rolled oats
340g (12 oz) grated carrot
230g (8oz) grated extra matured cheddar
2 eggs (beaten)
115g (4oz) butter (melted)
Salt and black pepper

Method

1. Mix all ingredients together really well and spread on a large, shallow baking tin. Press down well.
2. Cook in a medium oven - 180C - for 25-30 minutes
3. Cut into small squares or rectangles (about the size of fish fingers) Serve warm or cold.
