Ingredients

1 packet short crust pastry
100g minced beef
1 onion (chopped)
1 potato (diced)
100g swede (diced)
1 tsp chopped herbs
1 tbsp oil
½ beaten egg
Salt and pepper

Method

1. Heat the oil in a frying pan. Fry onion and beef til it changes colour.
2. Add in potato, swede, herbs, salt and pepper and ½ cup water. Bring to the boil. Cover and simmer for 10 minutes. Leave to cool.
3. Roll out the pastry. Cut into 4 X 12cm diameter rounds. Divide the filling onto the 4 rounds of pastry. Brush the edges with water. Fold over and seal the edges firmly.
4. Place the pasties on a greased baking tin. Put some holes on top of the pasties to allow the steam to escape. Brush the pasties with beaten egg.
4. Bake in the oven 190C/375F/Gas 5 for 20 minutes.

LUCYCAKEFACE the pastry used is shortcrust in our family but I have a friend who makes hers from puff pastry. Like most things it is what you fancy really. Have a go but don't make the pastry too thin or your pasties will split and the juices run out.

I would LOVE a traditional Cornish recipe. How do they make that superb pastry?

I am Cornish and follow my Grandmother's recipe. It is quite different. All the vegetables and meat go into the pasty raw. There is no frying or cooking first. The meat used is skirt of beef which is finely chopped along with the onion and swede. The potato is finely sliced and added with salt and pepper.

Not a criticism (!) but genuine Cornish Pasties have raw chopped skirt of beef, diced raw potato, diced raw swede and finely chopped onion in the filling - nothing is cooked prior to being enclosed in pastry!

This recipe is easy to make. It is lovely for packed lunch or picnic.
