Fragrant chicken, kale and lemon grass stir-fry recipe from francesb
Ingredients400g chicken breast chunks (or chicken breast fillets cut into chunks)
1 tbsp lemon grass puree (from a jar or tube)
2 tsp chopped ginger
1tsp chopped garlic
2 tbsp sesame oil
200g pack curly kale
1 red pepper (deseeded and sliced)
2 tbsp light soy sauce
Rice to serve
Method1. Mix the chicken with the lemon grass, ginger, garlic and half the sesame oil and marinate for five minutes.
2. Heat the remaining oil in a wok or frying pan and add the chicken. Stir-fry for 5-7 minutes until the chicken is browned and almost cooked through.
3. Add the kale and pepper to the pan and continue to cook for 3-4 more mins until the kale is wilted and the chicken is completely cooked through.
4. Stir in the soy sauce and cook for 1 min. Serve with rice.
