IngredientsPizza Dough:220g (8oz) plain white flour 2 level tsp baking powder Pinch of salt and pepper 130ml (¼ pint) milk 65g (2½ oz) salted butter Topping: ¼ jar/175g passata 1 onion (chopped) 1 red pepper (diced) 3 mushrooms (sliced) 85g (3oz) grated mozzarella |
Handy HintThese are tasty novelty pizzas with lots of hidden vegetables - perfect for fussy kids! You can experiment with different toppings - try adding broccoli, peas, courgette or aubergine to the topping mix, or flake tuna or tinned mackerel onto the pizza people for variety. Try using different shaped cutters, too - you could make miniature round pizzas with circular cutters, pizza animals with animal cutters or use cutters in the shapes of your favourite TV characters. |

Method1. Pre-heat oven to 220C/425F/Gas Mark 72. Sift flour, baking powder, salt and pepper into a bowl. Rub the butter into the flour. 3. Add the milk. Mix to a soft dough, then knead for five minutes. 4. Roll out pizza base into a circle, approx 25cm in diameter, and allow to stand for ten minutes. 5. Put all the topping ingredients, except the mozzarella, into a food processor and blend until smooth. Alternatively, place ingredients into a jug and use a hand-held blender to puree. 6. Spread topping mixture evenly onto base, and sprinkle with the grated mozzarella. Using a gingerbread man cutter, cut out people-shaped mini-pizzas. 7. Place pizza people onto a baking tray and cook for 15-20 minutes until golden brown. |
