Ingredients

15g butter
4 tbsp chopped fresh parsley
6 eggs (beaten)
4 slices smoked salmon (cut into strips)
Salt and freshly ground black pepper
Spinach leaves to serve

Method

1. Heat the butter in a non-stick frying pan until foaming.
2. Stir the parsley into the eggs, season with salt and freshly ground pepper and pour into the pan.
3. Quickly stir and shake the pan to evenly distribute the eggs and cook over a medium heat until almost set.
4. Take the pan off the heat and slide the omelette onto a small plate.
5. Cut the omelette in half and top each half with smoked salmon and spinach leaves. Serve immediately.
