Ingredients

4 tbsp vegetable oil
1 onion (chopped)
1 garlic clove (chopped)
1 stick celery (chopped)
1 medium potato (peeled and chopped)
1 tsp paprika
2 x 400g cans chopped tomatoes
500ml vegetable stock
Salt and freshly ground pepper
Cream or natural yogurt and chopped parsley to garnish
crusty bread, to serve

Method

1. Heat the vegetable oil in a large pan, add the onion, garlic, celery and potato and cook for 5 min, stirring occasionally to soften.
2. Add the paprika, chopped tomatoes and stock. Bring to the boil, then simmer gently for 15 mins until the vegetables are tender.
3. Season with salt and freshly ground pepper and garnish with a spoonful of cream or yogurt and chopped parsley.
Serve with crusty bread.
