Ingredients

2 baking potatoes (scrubbed)
4 rashers streaky bacon
3 tbsp olive oil
Salt and freshly ground pepper
100ml pot soured cream
A sprinkle of dried chilli flakes
2 spring onions (sliced)

Method

1. Preheat the oven to 220C/Gas7. Prick the potatoes all over with a fork and cook them in the microwave on full power for about 10 minutes until just soft when gently squeezed
2. While the potatoes are cooking, grill or fry the bacon until crisp, then roughly chop.
3. Cut the potatoes in half and scoop out a spoonful of potato from the centre of each half. Place the potato halves on a baking tray and drizzle the oil over the top.Season with salt and freshly ground black pepper and bake in the oven for 15 mins until crisp and golden. Serve hot with bacon, soured cream, chilli flakes and spring onions.
