Ingredients75g green beans (trimmed)75g new potatoes (scrubbed and sliced) 300g linguine or spaghetti 50g fresh basil leaves 50g pine nuts 2 garlic cloves (peeled) 100ml olive oil 75g Parmesan Salt and freshly ground pepper |

Method1. Cook the green beans, potatoes and pasta together in pan of boiling salted water for 10 minutes until just tender.2. While the vegetables and pasta are cooking, place the basil, pine nuts, garlic and olive oil in a food processor or blender to a smooth paste .Add the Parmesan, whizz briefly to mix and season with salt and pepper. 3. Drain the vegetables and pasta, toss with pesto and serve. |
