Ingredients

200g dried wholemeal pasta
115-170g (4-6oz) grated Cheddar
1 chopped onion
1 cup chopped mushrooms
1 tin mixed beans in mild chilli sauce
1/2 tbsp olive oil
Salt and freshly ground pepper to taste

Handy Hint

Other veg (eg leftover cooked carrot, peas, courgetttes etc can be used instead of mushrooms) For your health's sake (and flavour) add some chopped garlic along with the onion, and use reduced fat Cheddar. If you like spicy food, add a little chilli powder to taste. For hungry kids (mine love this meal) add some home made potato wedges.

Method

1. Boil pasta as per instructions (until 'al dente' or a little softer if you prefer) and drain.
2. Gently fry onions and mushrooms in oil until onions translucent.
3. Combine both (veg and pasta) in a saucepan with the tin of mixed beans, heat gently until well heated through. Season to taste. Place in a lasagne dish and cover with grated cheese.
3. Place under hot grill for few minutes until cheese is bubbling. Serve with a mixed salad, and crusty bread. Delicious, nutritious and economical!

I created this recipie about 15 years ago while preparing for a party. I over-cooked some pasta but rather than dumping it I decided to combine it with the very first tin of spicy beans I had ever bought. I put some grated cheese on top and stuck it under the grill -resulted in a really tasty snack which I adapated over the years. Definitly one of my family's all-time faves!!
