Ingredients3tbsp olive oil1 onion (chopped) 2 garlic cloves (chopped) 4 skinless chicken breast fillets (cut into chunks) 2 red peppers (deseeded and sliced) 1 stalk celery (chopped) 2 red chillies (deseeded and finely sliced) 3 spring onions (sliced) 250g long grain rice 227g can chopped tomatoes 500ml chicken stock 2 tbsp chopped fresh coriander 1/2 tsp ground cumin |

Method1. Heat the oil in a pan. Cook the onion and garlic for 2-3 minutes. Add the chicken and cook until browned. Add the peppers, celery, chillies, spring onions and rice. Stir well to mix.2. Add the canned tomatoes and stock and season with salt and freshly ground pepper. Bring to the boil, cover, reduce the heat and simmer for 20 minutes stirring occasionally until the rice is cooked and the liquid has been absorbed. Stir in the coriander and cumin. |
