Squid with capers and tomatoes recipe from francesb
Ingredients3 tbsp olive oil
1 onion (chopped)
1 garlic clove (crushed)
4 raw squid tubes (cleaned)
400g chopped tomatoes
100ml vegetable stock
Pinch of sugar
Salt and freshly ground pepper
Method1. Heat the oil in a saucepan. Add the onion and garlic and cook for about 4 minutes until the onion has started to soften. Add the squid and fry for about three minutes, turning occasionally.
2. Add the tomatoes and stock and season with salt and black pepper. Bring to the boil then reduce the heat, cover and simmer about 20 minutes .Add the capers, stir in the sugar and cook for 5 mins until the squid is tender. Cool slightly before serving.
