Ingredients2 40g tins of chickpeas (rinsed and drained)Finely grated zest and juice of 2 lemons Small bunch parsley (leaves roughly chopped) 150g feta cheese (cut into cubes) 4 tbsp olive oil Pinch of sugar Salt and freshly ground black pepper |

Method1. Place the chickpeas in a bowl with the lemon zest, 4tbsp lemon juice, parsley, feta and olive oil. Season with salt, freshly ground black pepper and a pinch of sugar. Mix well and leave to stand for 30 minutes before serving. |
