Ingredients

200g hazelnuts
300g softened butter
300g caster sugar
6 eggs
150g self raising flor
1 1/2 tsp baking powder
1 tsp baking soda
1 1/2 tsp vanilla flavour
4 1/2 tbsp milk

For the butter cream:

100g softened butter
2tbsp cocoa
250g icing sugar
1 tsp vanilla flavour
2 tsp milk

For the topping:

60ml water
3 tbsp golden syrup
60g caster sugar
80g dark chocolate
Mini eggs
Little chicks

Method

1. Preheat oven to 180C/Gas 4 and line two 23cm/9 inch cake tins
2. Toast nuts for 20 mins then lower oven temp to 160C/Gas 3
3. Grind nuts in food processor then beat sugar and butter until fluffy, beat in eggs and ground nuts.
4. Fold in flour, baking powder and soda. Gently stir in vanilla and milk.
5. Divide mix between the 2 tins and bake for 40 - 50 mins. Cool in tins for 10 mins, then turn onto cooling rack
6. To make the butter cream beat the butter, cocoa, icing sugar and vanilla and add milk according to texture.
7. Sandwich both cakes together with the buttercream
8. For the topping, place water, syrup and sugar in small pan and bring to boil stir constantly. remove from heat, break chocolate up and add to pan.
whisk until smooth glaze, pour over the top of the cake.
9. Decorate with mini eggs and little chicks
