Ingredients

400g baby spinach
2 85g packs low-fat soft cheese
4 140g pieces of skinless haddock
2 large tomatoes (chopped)
4 tsp grated parmesan

Method

1. Turn the oven to 200C/fan 180C/Gas 6. Pile the spinach into a large pan over a medium heat, turning it over and over until it has wilted. Remove from the heat and drain off the excess liquid. Mix the spinach with the soft cheese then place in the bottom of a baking dish and sit the haddock pieces on top.
2. Lay the sliced tomatoes on top of the fish and sprinkle with parmesan. Bake for 15-20 mins (depending on the thickness of the haddock) or until the fish is cooked through.

I made this on Friday and was pleased with the result. I halved the recipe for two of us but should have kept the spinach 400 gr as we like it
