Ingredients

1 tsp oil
2 onions (chopped)
Sliced mixed peppers
450g (1 lb) sliced chicken
2tsp tomato puree
2 cloves garlic
1 can Diet Coke or Dr Pepper

Handy Hint

Could use Fanta or Dr Pepper for variety

Method

1. Fry onions and garlic in the oil. Add the peppers. Then add the sliced chocken and fry for a few minutes.
2. Add the tomato puree and Diet Coke and simmer for about 20 minutes.
3. If you want to bulk this out you can add cooked noodles or plain cooked rice before bringing to the boil.
