Ingredients115g (4oz) butter or margarine
170g (6oz) caster sugar
225g (8oz) self raising flour
55g (2oz) chopped walnuts (or a large handful)
2 eggs
2 large or 3 medium very ripe bananas
1 heaped tsp cinnamon |
Handy Hint
This is a great way to use up bananas......Can use chocolate drops instead of walnuts for the grandchildren (or I have even used 2 chopped up Curly Wurlys) |
Method1. Heat oven to 180C/Gas mark 4
2. Cream butter and sugar together until light in colour then mix in the eggs.
3. In a separate bowl mash together the ripe bananas then put the mashed bananas in with the butter/sugar/egg mixture
4. Add the chopped walnuts and mix well together
before folding in the flour/cinnamon
5. Place the mixture into a greased (and lined) loaf tin. Bake for 40 mins at 180C/Gas 4 then lower to 150C/Gas 2 for a final 30 minutes.
6. Put on a rack to cool. (Although is really tasty when still hot!)
