500g diced chicken breast
2 chopped peppers
454g tin of pineapple chopped

For the sauce:

2 tbsp cornflour
100ml pineapple juice (from the tin of pineapple)
4 tbsp vinegar
2 tbsp soy sauce
4 tbsp sugar
6 tbsp tomato ketchup


1. Place all of the sauce ingredients into a pan over a medium heat. Stir continuously until the sauce thickens and then remove from the heat.
2. Place the chicken into a wok with 2 tbsp olive oil and cook until sealed. Add the peppers and continue to cook until these have softened a bit. 3. Add the pineapple and then mix in the sauce. Continue to cook for about 10 minutes to ensure the pineapple and sauce are heated through. Serve with rice or chips.

To me, this is just as good as any take away sweet and sour meal, and you know exactly what is going into it. You can also add bamboo shoots if desired.
