Ingredients500g diced chicken breast2 chopped peppers 454g tin of pineapple chopped For the sauce: 2 tbsp cornflour 100ml pineapple juice (from the tin of pineapple) 4 tbsp vinegar 2 tbsp soy sauce 4 tbsp sugar 6 tbsp tomato ketchup |

Method1. Place all of the sauce ingredients into a pan over a medium heat. Stir continuously until the sauce thickens and then remove from the heat.2. Place the chicken into a wok with 2 tbsp olive oil and cook until sealed. Add the peppers and continue to cook until these have softened a bit. 3. Add the pineapple and then mix in the sauce. Continue to cook for about 10 minutes to ensure the pineapple and sauce are heated through. Serve with rice or chips. |
