Spicy turkey, bean and tomato soup recipe from compingstar
Ingredients10ml olive oil
1 onion (peeled & chopped)
1 tsp paprika powder
2 cloves garlic (peeled and crushed)
1 chopped red pepper
2 chopped celery sticks
150g diced turkey
15ml tomato puree
300ml vegetable stock
1 can of borlotti beans or black eyed beans
Pinch of sugar (optional)
Salt & freshly ground black pepper
Crusty white bread to serve
Method1. Heat the oil in a large saucepan, add the onion and garlic and cook for 5 mins until soft. Add the diced turkey and paprika powder and sauté the turkey until it is cooked.
2. Add the pepper and celery to the pan and cook for 5 mins. Stir in the tomato puree, tomatoes, stock and seasoning. Bring to the boil, cover and simmer for 15 minutes.
3. Add the beans to the saucepan and cook for 5 mins. Serve with crusty bread.
