Ingredients

Any cooked fish, prawns, sea food etc
60g (2oz) butter
60g (2oz) plain flour
455ml (16fl oz) milk (approx)
½ small onion (peeled and sliced)
4 black peppercorns
1 dried bay leaf
3 fresh parsley stalks
2 tbsp tomato ketchup
Blade of mace
Salt and white pepper

Method

1. Infuse the onion ,peppercorns, bay leaf and parsley stalks in the milk. Then strain.
2. Melt butter, stir in flour then mix the milk in a bit at a time boiling between additions. Season and add ketchup to taste.
3. Pour over hot fish and serve.
