IngredientsAny cooked fish, prawns, sea food etc60g (2oz) butter 60g (2oz) plain flour 455ml (16fl oz) milk (approx) ½ small onion (peeled and sliced) 4 black peppercorns 1 dried bay leaf 3 fresh parsley stalks 2 tbsp tomato ketchup Blade of mace Salt and white pepper |

Method1. Infuse the onion ,peppercorns, bay leaf and parsley stalks in the milk. Then strain.2. Melt butter, stir in flour then mix the milk in a bit at a time boiling between additions. Season and add ketchup to taste. 3. Pour over hot fish and serve. |
