Ingredients

2 salmon fillets
1 leek
3 tbsp single cream
1 red chilli
2 large potatoes
Grated cheddar cheese
Oil for frying leek
A little butter and milk for mashing the potatoes
Black pepper to season

Handy Hint

Add more or less chilli according to taste. You can use other fish apart from salmon.

Method

1. Steam and flake salmon and place in oven proof dish.
2. Fry cleaned and thinly sliced leek for a few minutes in a little oil then add to dish.
3. De-seed and chop small the red chilli and add this to dish.
4. Peel and cook potato then mash with butter and milk.
5. Put 3 tablespoons cream into dish then add mash potatoes and smooth over with fork and sprinkle cheese on top.

Ease to make and good to have in the freezer. Goes well with roasted peppers and white wine.
