Ingredients170g (6oz) sugar115g (4oz) soft marg 3 large eggs 225g (8oz) self raising flour 225g mixed fruit 55g (2oz) walnuts chopped |
Handy HintInstead of the walnuts I sometimes put in 115g/4oz ground almonds and this makes the cake lovely and moist. |

Method1. Cream the margarine and sugar.2. Beat in the eggs one at a time. 3. Sift in the flour and fold in along with the fruit and nuts. 4. Put the mixture into a greased and lined loaf tin and bake at 160C/325F for approximately 1hr 15mins to 1hr 30mins or until a skewer comes out clean when inserted in the cake.
