Ingredients

1 small red onion (finely chopped)
l clove garlic (crushed)
1 small red chill (finely chopped)
Juice of 1 lime (or lemon)
1 tbsp white wine vinegar
1 tsp caster sugar
Watermelon wedge (deseeded & diced)
1 ripe avocado (diced)
Small bunch coriander (or parsley) leaves (chopped)
200g cooked tiger prawns (fresh or frozen)

Handy Hint

If prawns are frozen, defrost first.

Method

1. Put the onion in a medium bowl with the garlic, chilli, lime juice, vinegar, sugar & some seasoning. Marinate for ten mins.
2. Add the watermelon, avocado, coriander & prawns, then toss gently to serve.
