Ingredients

150g butter
150g white sugar
3 medium eggs
150g self-raising flour
4 tbsp lemon juice
Grated zest from 2 lemons
Lemon curd

For the meringue frosting:

225g white sugar
4 large egg whites
3 tbsp ice water
1½ tsp lemon juice
2 tsp vanilla essence

Method

1. Preheat the oven to 180C/Gas 4.
2. Beat the butter and sugar together until light and fluffy
3. Beat in the eggs, one at a time, beating well between each addition
4. Fold in the flour and then add the lemon juice and the lemon zest
5. Fill the cupcake holders about 1/3 of the way up and make a small well with the back of a teaspoon. Fill the well with as much lemon curd as desired and cover the well with the remaining mixture, making sure no lemon curd is peeking through.
6. Bake for about 16 minutes.
7. Whisk all the frosting ingredients until just combined.
8. Pour the combined ingredients into a bowl resting on a pot of simmering water. Continually whisk the egg mixture until all the sugar has dissolved (about 10 minutes, don’t let the mixture boil)
9. Place the mixture back into the electric mixture bowl and whisk on full speed until it becomes very fluffy and stiff.
10. Pipe the meringue frosting onto cooled cupcakes
