Ingredients

125g butter
150g caster sugar
1 tsp vanilla extract
1 egg (beaten)
2 very ripe bananas (mashed)
190g self raising flour
60ml milk

Method

1. Grease and line 1kg/2lb loaf tin.
2. Melt butter, sugar and vanilla in a saucepan over a medium heat.
3. Remove from heat, add mashed bananas and mix well.
4. Add egg, mix well again.
5.Stir in flour and milk.
6. Pour into prepared tin and sprinkle over 1 tablespoon of demerara sugar.
7.Bake at 150C for 35 mins until a skewer comes out clean.
8. Leave to cool.

Whereas some recipes for using up overripe bananas can be quite stodgy, this is a cake not a loaf and is light and moist.
