Ingredients500g ricotta cheese200g Parmesan 1 egg yolk Seasoning (salt/pepper) Nutmeg (1/8 grated) 500g semolina |

Method1. Get a large dish and sprinkle a layer of semolina2. Mix all other ingredients together 3. Roll into small balls either using 2 teaspoons or your hands 4. Cover with semolina and leave overnight in the fridge. 5. To cook place in a pan of boiling slightly salted water, they only need a few minutes and will float when cooked. Serve simply with melted butter infused with sage, and some Parmesan. Also fab with many sauces you would usually serve with pasta, tomato and chilli sauce, ragu, pesto etc. |
