IngredientsFor the filling:300ml fish stock 300g creme fraiche or soured cream 25g butter 150g smoked haddock fillet 150g salmon fillet 150g white fish 1 small onion A sprinkle of parsley For the mash: 700g Maris Piper potatoes (peeled and chopped) 25g butter 100g mature cheddar (grated) 1 tsp mustard (optional) Salt and freshly ground black pepper |

Method1. Lightly heat butter in frying pan. Add onion. Fry until soft.2. Add all fish except prawns. Poach gently for about 5-7 minutes, or until the fish is lightly brown. 3. Add prawns. Fry for 3 mins. Add stock, and creme fraiche/soured cream. 4. Remove from pan and turn into ovenproof dish, lightly flaking and removing any bones and skin. Sprinkle with parsley and pinch of cayenne pepper. Slightly stir. 5. Boil the potatoes in pan of lightly salted water for 15 minutes, or until tender. 6. Drain and mash with the butter and a small amount of milk. Add mustard. Form into a soft smooth consistency. Spread on top of the fish. 7. Sprinkle over grated cheese and place in oven for 15 mins until fish is bubbling. |
