Ingredients

1 Onion
Olive oil
1 1/2 tsp mustard powder (or to taste)
1 tsp chilli powder (more if you like it hot)
2 vegetarian stock cubes
Seasoning to taste
1 block marinaded tofu
2 cans chopped tomatoes
1 red pepper
1 green pepper
1 400g can chickpeas or broad beans

Handy Hint

I have also used it with diced chicken instead of tofu and it still tasted good.

Method

1. Chop and fry the onion in a little olive oil, add mustard powder and chilli powder and cook for 30 seconds.
2. Add chopped tomatoes, stock cubes (crumbled) and peppers and simmer till peppers are nearly cooked. At this point season to taste and add hot water if it is too thick but I don't normally have to. 3. Then add the chickpeas or broad beans and the tofu (which usually comes cubed) and allow to simmer for another 10 mins. Serve with rice or flat breads, but my favourite is with a jacket potato!
