Ingredients

1/4 cucumber
6 tomatoes
1/2 red pepper
6 spring onions
1 finely chopped red chilli
Small piece ginger (grated)
2 tsp of tomato puree
3 tsp lemon juice
Pinch of salt
Freshly ground pepper

Handy Hint

This salsa goes very well with burgers or equally well as a dip for nibbles. I also mix what is left with some cold rice for a refreshing salad dish.

Method

1. Chop all the vegetables
2. Mix well in a bowl with all the other ingredients
3. Leave to rest for about an hour then stir again
