Ingredients1kg (2 1/2 lb) ripe tomatoes (standard, plum and cherry in reasonable proportions)2 white salad onions 1 tsp caster sugar Salt and freshly milled pepper 1 tbsp red wine vinegar 4 tbsp olive oil 2 tbsp coarsely snipped fresh flat leaf parsley |

Method1. Using a small vegetable knife, cut out the stalk from the standard and plum tomatoes. Slice the standard tomatoes across, the plum lengthways and cherry in half. Peel and thinly slice the onions, separate out the rings.2 . Layer the tomatoes and onions in a serving dish, contrasting the different tomatoes to get an attractive effect. Sprinkle the layers with sugar, salt and freshly milled pepper. Let the salad marinate for at least 2 hours. 3. Before serving, spoon over the vinegar and olive oil, then sprinkle with parsley. |
