Chicken with mushrooms recipe from albertina
Ingredients4 chicken breasts
1 large onion (chopped finely)
8 large mushrooms (sliced)
2 tbsp tomato puree
1/4 litre (½ pint) chicken stock
55g (2oz) butter
½ tsp mixed herbs
Salt and pepper
Method1. Gently brown the chicken in the butter in a large frying pan for 20 minutes. Remove chicken and place in heated dish in oven.
2. Top up the butter in frying pan if needed and soften the onions until transparent. Add the chopped mushrooms and cook together for 4 minutes.
3. Add stock and puree and rest of ingredients and bring to the boil. Simmer for 5 minutes then pour over chicken and serve with jacket potatoes and salad. Delicious!
