Ingredients

225g cheese - whatever sort you want
225g breadcrumbs
Milk
1 egg
Seasoning

Handy Hint

This is a way of using up any leftover cheese and you can put two or three different sorts in, if you wish.

Method

1. Grate 225g (8oz) cheese and stir in an equivalent amount of breadcrumbs.
2. Add 1/4 litre (1/2 pint) of milk and one egg. Season with salt and pepper.
3. Pour into a buttered pudding basin or small lasagne dish and bake until browned on top for about 1/2 hour at 180C.

This is a recipe that mums and grandmothers have made in my family. My sister reminded me about it recently, so I tried it and it's delicious. It rises a little, like a souffle, and is great with a side salad or some new potatoes and garden peas.
