IngredientsSausages (enough for whoever is eating)1 small tin baked beans 1 tin mixed beans (drained) 1 tin kidney beans (drained) 3 carrots (grated) 1 onion (diced) Sunflower oil 4 large baking potatoes (or 2 sweet potatoes) 1 beef stock cube to make up 1/4 litre/ 1/2 pint stock 3 bay leaves 2 tsp curry powder 1 tbsp tomato puree |

Method1. Fry the sausages until brown in a pan, remove from pan and put on a plate.2. In the same pan, add a little oil and fry off the onion and carrot. Next add the beans, tomato puree, curry powder, bay leaves and stock. Simmer for 10 minutes. 3. Meanwhile peel and chop up the potatoes, boil and mash. 4. Next lay the sausage in the bottom of a casserole dish, pour over the bean sauce and top with the mash. Fork the top of the mash and put into the oven on 200C/Gas 6 for 30 minutes. |
