Ingredients400ml double cream2 ripe peaches (chopped) 75g (3oz) caster sugar 3 leaves gelatine (soaked in water) 50ml milk ½ mango (peeled and roughly chopped) Strawberry slices |

Method1. Heat the cream with sugar in a saucepan. Bring to a boil, stirring occasionally until all the sugar has dissolved2. Remove from the heat and allow to cool. Heat the milk in a separate saucepan until just simmering, then remove from the heat. 3. Drain the gelatine leaves and add to the warm milk. Stir until dissolved then pour through a sieve into the cream. Allow to cool. 4. Blend the mango and peaches to a fine purée in a small blender. Pass the fruit purée through a sieve into a bowl. Stir into the cream mixture. Pour the mixture into 4 small glasses and leave to set for 2 hours in a fridge. 5. To serve, dip the panna cotta into a bowl of hot water briefly or slide a knife around the outside edge carefully. Turn the panna cotta out onto a plate. Arrange the strawberry slices on the side. |
