Handy HintWhy not try a combination of different chocolate? I have made these using a combination of milk and white chocolate, from well known chocolate bars - just cut the chocolate into chunks or pieces using a rolling pin or the back of a knife! |

Method1. Preheat the oven to 170C/Gas mark 32. Grease baking trays or line with baking parchment 3. Sift together the flour, bicarb and salt and set to one side. 4. In a medium bowl cream together the melted butter, brown sugar and caster sugar until well blended 5. Beat in the vanilla, egg and egg yolk until light and creamy 6. Mix in the sifted ingredients until just blended 7. Stir in the chocolate chips by hand using a wooden spoon 8. Drop cookie dough onto the prepared baking trays (for each cookie allow around 4 tablespoons of dough. If you want to make smaller cookies use 1 rounded tablespoonful) 9. Do not flatten the dough and try to place the Cookies around 8cm apart 10.Bake for 15 to 17 minutes in the preheated oven or until the edges are lightly toasted 11.Cool on baking trays for a few minutes before transferring to wire racks to cool completely. |
