Method1. Heat the oven to 220C/Gas mark 7.2. Sift the flour into a bowl with the salt. Stir in the sugar and rub in the butter until you have a crumbly consistency. Stir in the raisins if you are using them. Add the milk, a bit at a time, and work the mixture into a soft dough. 3. Leave the mixture to rest for about 15 minutes before turning onto a floured work surface and rolling out to about 2cm/ 3/4 inch thick. 4. Using a round pastry cutter, cut the dough into individual scones. You should get 8-10 scones from this mixture. Brush the tops of the scones with the beaten egg, this will give them a shiny finish (or you can just sprinkle them with flour for a matt finish, if you prefer). Place the scones in the oven on a greased baking sheet and bake for about 12 minutes, or until they have risen and are golden. 5. Transfer to a wire rack and allow to cool before serving with butter, jam and cream. | |||||||||||||||||||
