Ingredients150g butter350g caster sugar 500g plain flour 3 tsp baking powder ¼ tsp bicarbonate of soda 500g apples (finely chopped and cored) 4 eggs 2 tbsp golden syrup For the caramel sauce: 200g caster sugar 2 tbsp golden syrup 50g water 120g extra thick double cream 30g unsalted butter ½ tsp vanilla extract |

Method1. Preheat the oven to 160C and grease a 25cm (10”) round cake tin.2. In a bowl, cream the sugar and butter together until pale. Mix the flour, baking powder and bicarbonate of soda in a separate bowl. 3. Add the eggs and flour alternately, a little at a time to the sugar and butter mix. 4. Stir in the golden syrup and apples and pour into the cake tin. Bake in the oven for 80 minutes till golden brown. Allow to cool. 5. To make the sauce place the sugar, water and golden syrup into a medium sized pan. Stirring continuously, bring the mix to the boil. Allow the sauce to boil, without stirring, till it turns a dark amber colour. 6. Remove the pan from the heat and slowly spoon the cream into the sauce. Stir the mix till smooth and then stir in the butter and vanilla extract. If there are any lumps, put the caramel through a sieve. 7. One the cake has cooled, cut in half and spread the caramel in the middle. |
