Ingredients250g rhubarb
450g Conference pears
2 balls stem ginger (plus 1 tbsp of the ginger syrup)
250g plain flour
125g unsalted butter
125g soft light brown sugar
1 level tsp ground ginger |
Handy Hint
This recipe evolved when I picked the last of the rhubarb but found I had no cooking apples. Ginger has a natural affinity with these ingredients, but you can leave it out |
Method1. Wash, trim and cut rhubarb into 2.5cm (1") pieces
2. Peel, core and chop pears into similar size pieces
3. Finely chop ginger
4. Place in microwaveable/baking diah with ginger syrup, microwave on high for 5 mins.
5. Mix crumble ingredients until they resemble fine breadcrumbs
6. Place on top of fruit and bake in moderate oven until cooked and golden - approx. 45 mins.
7. Serve with custard, cream or ice cream
