450g sausage meat
450g skinned fresh tomatoes (chopped)
Mashed potato
Cheese (optional)
Seasoning

Handy Hint

Season well with sea salt and black pepper.

Method

1. Part cook sausages in casserole dish, then take from oven and season to taste.
2. Add chopped tomatoes and return to oven to finish cooking the sausage.
3. Remove from oven and cover with mashed potato and grated cheese if desired.
